These Cranberry Orange Pancakes bring a refreshing twist to a breakfast classic with their zesty citrus flavor and dried cranberries. Made with protein-packed cottage cheese and oat flour, these pancakes are light, fluffy, and naturally gluten-free. The orange zest adds a bright, fresh note that pairs perfectly with the sweet-tart cranberries, while the side of citrus salad brings an extra pop of color and flavor to the plate. In just 10 minutes, you can whip up a satisfying, protein-rich breakfast that feels indulgent but is actually nourishing and wholesome, perfect for any morning.

Ingredients4 servings

  • 4 navel oranges, peeled and segmented
  • 4 large eggs 
  • 2 cups oat flour
  • 2 cups cottage cheese
  • 1 cup whole milk (or non-dairy milk)
  • ½ cup dried cranberries
  • 2 tbsp olive oil (divided)
  • 1 tbsp fresh mint, chopped
  • 1 tsp orange zest (from 1 orange)
  • 2 tsp baking powder
  • Garnish: maple syrup

Directions

Using a blender, mix together the cottage cheese, oat flour, eggs, milk, and baking powder until smooth. Pour the batter into a bowl and mix in the orange zest, dried cranberries.

Heat 1 tbsp of oil in a skillet over medium heat. Pour ¼ cup of the batter into the skillet and cook for 2-3 minutes on the first side until small bubbles form on the surface.

Flip and cook on the other side for an additional minute, until golden brown. Repeat with the remaining batter, oiling the skillet as needed until finished.

In a small bowl, combine the citrus segments and toss gently with chopped mint for the salad.

Serve warm pancakes with maple syrup and with the citrus salad on the side. 

Notes:

  • You can make your own oat flour by placing rolled oats in a blender or food processor and blend until the oats are ground into a fine, flour-like consistency. 
  • Use the small side of a box grater to zest the orange. Hold the orange firmly and gently scrape the outer orange-colored peel, avoiding the white pith underneath. Use the zest immediately for the best flavor.
  • You can let the pancake batter rest for 5-10 minutes before cooking. This helps the oats absorb the liquid, for fluffier pancakes.
  • You can use different citrus fruits too like mandarins and tangerines.

      Depending on how much protein powder you would like to use, it is possible to add a little right to the mix. If you plan to use a lot, you could add a little less oat flour to compensate.

    I have not yet tried this recipe, but it sounds very tasty.

    This recipe sounds easy and fairly healthy for pancakes. Children like pancakes but they are heavy. This recipe is an improvement since it uses oats and cottage cheese. I depend on your app. I have shared it with so many people.

      Hi, I just used an app on my phone. I used whole milk and low fat cottage cheese. This makes 4 servings around 600 calories per serving without syrup, and about 32 g of protein.

      If you would prefer a non-dairy option, a diary-free yogurt would work too! You may need to adjust the amount a little based on how liquidy the yogurt is.

    According to Yuka , baking powder is BAD. Even aluminum free is bad because of phosphate
    Must use baking soda ( 1T)with cream of tarter (2T) and arrowroot (1T). Sift and store in cool dry place

      You could sub for almond flour, but you may need to adjust the amount used a little. Also note that almond flour doesn’t bind as well as oat flour, so you may need a small amount of additional binding agent (such as a tablespoon of ground flaxseed mixed with water or chia seeds).
